Chocolate Chip Banana Muffins
1/2 cup butter, softened
3/4 cup sugar
1 tsp. vanilla extract
1 cup mashed ripe banana (about two medium)
2 cups flour
2 tsp. baking powder
1 tsp. salt
3/4 cup semi-sweet chocolate chips
Cream together the butter and sugar in a large bowl. Add the eggs one at a time, beating well after each. Add the vanilla and mashed banana.
In a separate bowl, combine the flour, baking powder, salt, and chocolate chips. Add to teh creamed mixture and stir until just blended; the batter will be lumpy. Pour into greased muffin tins and bake in a 350 degrees oven for 25 minutes. Yield: 12 muffins
Baker’s notes: You can also make miniature muffins with these – over 36 mini muffins. You might like to add miniature chocolate chips instead of large ones if you make miniature muffins.
