Orange Pecan Mini-Muffins

An adaption of a lemon-pecan loaf from the Taste of Home. Very nice!

1/3 cup butter, softened

1 cup sugar

1 egg

1 1/2 cups flour

3/4 tsp. baking power

1/3 tsp. salt

1/2 cup sour cream/yogurt

3/4 cup pecans, chopped

2 t. grated orange peel (or 1-2 tsp. orange juice concentrate)

In a medium mixing bowl, cream butter and sugar until light and fluffy. Add egg, mix well. Add sour cream and orange flavors. Combine the flour, baking powder and salt, add to creamed mixture with pecans. Transfer to two greased mini-muffin pans. Bake at 350 for 10-20 minutes (I’m not sure) until lightly browned and a toothpick comes out clean. Sprinkle with powdered sugar if desired. Yield: 24 mini-muffins
