Mocha Double Chocolate Cookies

These are probably some of my favorite cookies. =)

Double Chocolate Cookies

1 1/4 cups butter

1 1/3 cups sugar

1 1/4 cups brown sugar

3 eggs

2 1/2 tsp. vanilla

3 3/4 cup flour

3/4 + 2 T. cocoa

3/4 tsp. salt

1 1/4 tsp. baking soda

1 1/4 cups chocolate chips

1 1/4 cups vanilla chips

Lightly cream butter and sugars in a large bowl. Add eggs and vanilla; mix until smooth. In a separate bowl, combine the dry ingredients. Add to creamed mixture along with the chips. Drop onto greased cookie sheets; bake at 375 for 10 minutes or until slightly firm. Don’t overbake! Yield: 50 cookies

Notes: We usually don’t make these just like the recipe – here’s some yummy variations:

  • Omit white chips. Add all chocolate chips.
  • Substitute for the white chips: 1 1/2 cups mini marshmallows and 3/4 cup chopped pecans
  • Add 1/4 cup instant coffee granules to the creamed mixture.
  • Whatever sounds good to you!

This recipe is credit to the “No Guesswork Cookbook” by Kim Cahill.

    Hey Rachel!
I really love looking at all your recipies. I have made these cookies before, and then i experimented and added ANDES Candies instead of Vanilla chips, and it was really good! Worth a try for anyone who likes mint and chocolate together!
