Onion-Garlic Poppy Seed Dressing

This is a creamy, pepper- and poppy seed-speckled dressing. It looks like it has milk or something, but it’s actually dairy-free! You might want to decrease the onion or garlic, as it’s pretty spicy as it is.

Onion-Garlic Poppy Seed Dressing


2/3 cup water

2 tsp. cornstarch

1/2 cup oil

1/4 cup vinegar

1/3 cup sugar

1/2 tsp. dry mustard

1/2 tsp. salt

1/2 tsp. onion powder

1/4 tsp. pepper

1/2 cup onion, lightly chopped

2 tsp. garlic, minced

2 tsp. poppy seeds

2 T. parmesan cheese

Mix water and cornstarch together in a saucepan. Heat over medium heat until it boils, cook for 1 minute. Remove from heat and cool slightly.

Mix oil, vinegar, sugar, mustard, salt, pepper, onion powder, onion, and garlic in a food processor until creamy and smooth. Lightly blend in parmesen cheese, poppy seeds, and cornstarch mixture. Let cool and serve on your favorite salad! Yield: 2 cups
