Corrie and I had fun making desserts and stuff in preparation for harvest the other day! We made peanut butter cookies (recipe below), Coconut Cookies, Whole Wheat Pita Bread, Carrot brownies, and Banana Fudge Cupcakes (picture below).
Peanut Butter Cookies
12 oz. butter, softened
1 1/2 cups sugar
1 1/2 cups brown sugar
1 1/2 cups peanut butter
1 T. vanilla
4 1/4 cups flour
3/4 tsp. salt
3/4 tsp. baking soda
3/4 tsp. baking powder
In a large bowl, cream butter and sugars. Add eggs, peanut butter, and vanilla. In a separate bowl, mix flour, salt, baking soda, and baking powder. Add to creamed mixture. Place on a greased cookie sheet and bake at 350 for 10 minutes or until done, but don’t over-bake!
Yield: 65 cookies
Variation: Add 2 2/3 cups chocolate chips to the dough for peanut butter chocolate chip cookies.

Banana Fudge Cupcakes
I changed up a recipe a lot and came out with this. Oops. No, they really aren’t cookies; they’re cupcakes. I hope they taste okay….I think the flatness is due to the incorrect combination of baking soda and baking powder. I need to figure those out sometime….
