Berry Good Muffins

I found these Raspberry Jam Muffins and had to make them this morning for breakfast. Very yummy! Here’s my version:

Berry Good Muffins

1/2 cup butter, melted

1/4 cup oil

3/4 cup honey

3 eggs

2/3 cup milk

1 tsp. vanilla extract

3 cups flour

1 1/2 tsp. salt

1 T. baking powder

2 cups mixed berries

1/2 cup blackberry jam

1 cup flour

7 T. sugar

6 T. butter

In a large bowl, combine butter, oil, honey, eggs, milk, and vanilla. In a separate bowl, mix flour, baking powder, and salt. Add to wet ingredients, mix until just combined. Fold in berries and jam. For topping, combine 1 cup flour, 7 T. sugar, and 6 T. butter until crumbly. Divide batter among greased/muffin-cupped muffin pans; sprinkle the topping over it. Bake at 325 degrees for 18-22 minutes or until a toothpick inserted comes out clean. Yield: 18 muffins
