Orange Mango Salad

Orange Mango Spinach Salad


10 oz. fresh spinach, torn

1 large orange, peeled and diced

1 medium mango, peeled and diced

1/3 cup craisins

Place in a large bowl.

Sugared Cashews:

1/2 cup cashews

1 T. butter

1/2 T. sugar

Melt butter in a small skillet. Add cashews and sugar. Roast over low heat until cashews are browned. Cool.

Orange Poppyseed Dressing:

1/2 cup sugar

1/2 cup oil

1/4 cup vinegar

3 T. orange juice

Salt, onion powder, and garlic powder to taste

1 tsp. poppy seeds

Mix sugar, oil, vinegar, orange juice and spices in a food processor or blender until sugar is dissolved. Add poppy seeds; blend until combined.

Sprinkle cashews over salad. Top with dressing.

Yield: 12-14 servings
