Peanut Butter Granola

I make this for my peanut-butter-loving brother (and anyone else who is so inclined). You should try it…especially if you like PEANUT BUTTER!!!


Peanut Butter Granola

7 cups oats

1/2 cup coconut

1/2 cup wheat germ

1/2 cup wheat bran

1/2 cup flaxseed meal

3/4 cup chopped walnuts, optional

1/2 cup cashews, optional

1/2 cup dry milk

1/2 cup brown sugar

1 cup peanut butter

1/4 cup honey

1/4 cup apple juice

1 tsp. vanilla extract

Combine first 9 ingredients in a large bowl. Place honey, peanut butter, and apple juice  in a microwave-safe bowl or measuring cup. Heat until easily stirred. Stir until smooth. Add vanilla, and add to oat mixture. Mix well. Spread onto two greased cookie sheets/jellyroll pans. Cook at 350 for about 45 minutes, stirring well every 10 minutes. Let cool; store in an airtight container. Enjoy!
