A-Peasing Salad

We found this recipe in the “From the Kitchen of Two Sisters” cookbook. I like their recipes because they are good and a little different from the everyday salad and vegetable recipes. Have you ever read this cookbook? What do you think of the recipes?

We enjoyed the salad, though not as much as some. If you’re feeling adventurous, I hope you’ll give it a try!

Note: When I say “adventurous,” don’t think this salad is almost too weird to be good. =) It’s yummy!

A-Peasing Salad

3 cups broccoli florets

1 1/2 cups cauliflower florets

1 1/2 cups frozen peas, thawed

1 1/2 cups raw cashew pieces

1 cup celery, thinly sliced

1 cup green pepper, chopped


1 cup mayonnaise*

1/2 cup olive oil

Juice of 1 lemon

1 T. Dijon mustard

2 tsp. soy sauce or tamari

1/2 tsp. pepper

1. Combine first 6 ingredients in a bowl.

2. Stir the dressing with a wire whisk and add to the salad; toss well.

Yield: 6 servings (probably more!)

*If you don’t want to use this much mayonnaise and/or olive oil, you can decrease it and/or exchange part of it for yogurt or sour cream.
