Grape and Walnut Salad with Feta Cheese

Don’t you agree that sometime’s it’s hard to think up a good salad? Especially for something special. I don’t know how it came to mind…then I semi-followed a recipe from my Super Salads cookbook. The flavors complement one another….sweet and crunchy walnuts, tart feta cheese, juicy grapes and cucumbers. Anyway, you should try it!

Grape and Walnut Salad with Feta Cheese

Spring mix lettuce

Grapes, halved

Cucumber(s), diced

Walnuts, sugar-roasted (see below recipe)

Feta cheese crumbles

Sugar-Roasted Walnuts

1/2 cup walnuts, broken

2 tsp. butter

1 tsp. sugar

In a small skillet, melt butter. Add sugar and walnuts. Cook over medium-low heat, stirring frequently, until lightly browned and crispy. Cool on a plate or piece of foil.

Dressing:

1/2-1 tsp. grated lemon peel

Juice from half a large lemon

2 T. canola/salad oil

1 tsp. Dijon mustard

1 tsp. sugar

Whisk dressing ingredients together in a small bowl. Drizzle over salad just before serving.

For salad, place desired amount of each ingredient in a large salad bowl. Drizzle with dressing.

Yield: 8-12 servings
