Miniature Lemon Cupcakes

In case some of you aren’t sure, I’m still alive. I know I haven’t posted in a while, but I still like to cook.

Meet these little cupcakes. Easy. Yummy. Cute.

Cupcakes aren’t like cookies…cookies at our house disappear a lot faster than cupcakes, but cupcakes are so much more fun!

Well, here they are.

Miniature Lemon Cupcakes

1/2 cup butter, softened

2/3 cup sugar

3 eggs

1 tsp. vanilla extract

Zest of one lemon

1/4 cup milk

1 1/2 cups flour

1 1/2 tsp. baking powder

1/4 tsp. salt

In a large bowl, beat butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition, scraping down sides of bowl as necessary. Beat in vanilla, lemon zest, and milk. In a separate bowl, combine flour, baking powder, and salt. Add dry ingredients to creamed mixture; combine well but don’t overmix. Divide batter into 3 dozen greased or paper-lined miniature muffin cups (you might have some extra dough). Bake at 350 for 10-15 minutes until a toothpick comes out clean. Let cool, then frost with (what else?) frosting:


1 1/2 T. butter, softened

1 plus 2 T. confectioners’ sugar

1 T. lemon juice

1/4 tsp. vanilla extract

1 T. milk

Combine all the frosting ingredients. Spread on cooled cupcakes.

Yield: 36 cupcakes

    Those cupcakes are absolutely adorable! Admittedly to my dismay, I am now shamelessly longing for a cupcake.
