Hot Chocolate Chip Cookies

What are you doing? Why aren’t you in the kitchen making these cookies? I want to describe these as “fabulous,” but I learned in a writing book to never, ever, EVER use the word “fabulous” in writing.

So I won’t.

But these are ambrosial cookies. That’s a pretty good word – you should look it up.

These are also evil. You don’t have to look that word up.

Hot Chocolate Chip Cookies

1 cup butter softened,

1 cup white sugar

2/3 cup brown sugar

2 eggs

1 tsp. vanilla

3 1/4 cups flour

4 pkg. (1 oz. packets, not sugar-free) hot chocolate mix

1 tsp. salt

1 1/4 tsp. baking soda

1 cup each white, milk, and semi-sweet chocolate chips

1. Preheat oven to 350 degrees.

2. Cream butter and sugars until smooth. Beat in eggs and vanilla.

3. In a separate bowl, combine flour, hot chocolate mix, salt, and baking soda. Add to wet ingredients, mix well. Add chips.

4. Use 1/4 cup measuring cup as a scoop for the cookies onto greased cookie sheets. Bake for 9-11 minutes until lightly browned around the edges. Let cool 5 minutes before removing to wire racks.

Yield: 30 cookies

You’ll be wise to use the 1/4 cup measure as a scoop. The bigger the cookie, the better.

What’s better than a hot chocolate chip cookie than a whole stack of them?

Yeah.

By the way, the reason our cookies don’t look very chocolate is because we didn’t have packets, so we had to improvise. I’d advise using packets, if you can. Has to be good.
